What is a microgreen?

 

Microgreens are tiny young vegetable greens that fall between sprouts and baby leaf vegetables. They range in size from 1-4 inches and are harvested just after the cotyledon leaves have developed and turned green. Most varieties are rich in potassium, iron, zinc, magnesium, and copper. They contain up to 5 times more vitamins and minerals then their fully grown counterpart. Microgreens are a great source of beneficial plant compounds like polyphenols, an important natural chemical that contains powerful antioxidant properties. Antioxidants help prevent the buildup of harmful free radicals which are highly reactive compounds that form in the body and can cause damage to cells.
